Why stainless steel is used in food preparation

Stainless steel is the working surface of choice in professional kitchens for good reason. It is non-porous, does not absorb liquids or food odours, and can be cleaned repeatedly without the surface breaking down in the way timber, laminate or low-grade coated steel can.

A properly built stainless bench also handles the reality of a busy operation.
