Stainless steel is built to handle hard work, but it still needs the right routine. Get it right and the bench stays hygienic, presentable and ready for the next service. Get it wrong and even premium 304 stainless can end up marked, tea-stained or carrying smells that should have been removed hours ago.

Start with a clear bench and a clean board

Never clean around equipment, food tubs or a chopping board still loaded with scraps. Clear the entire work surface first. Remove knives, gastronorm pans, containers and any removable chopping board. Scrape loose food into the rubbish, rather than flushing it down the bench with excessive water.

The chopping board needs its own cleaning process. Wash both sides, edges and underside supports with hot water and food-safe detergent, then rinse and sanitise according to your kitchen procedure. Boards are where food residue gets trapped, particularly after raw chicken, seafood, mince or dough work. Do not put a freshly sanitised board back onto a bench that has only been wiped over.

Apply the cleaning solution to the cloth or sponge rather than flooding the bench. Work across the surface with consistent pressure, paying attention to joins, corners, shelf edges, legs and the underside of the board support. Clean in the direction of the stainless grain where visible. This helps lift soil without leaving obvious wipe marks.

Rinse away detergent residue using a separate clean cloth dampened with fresh water. This step is often missed. Leftover detergent can leave a dull film that attracts fingerprints and makes a clean bench look streaky under kitchen lighting.

Once washed and rinsed, sanitise if the bench has been used for food preparation or is being turned over between tasks. Use a food-contact-safe sanitiser at the dilution and contact time specified on its label. More chemical is not better. An over-concentrated sanitiser can leave residue, damage surfaces over time and create an unnecessary food safety risk.

Finish by drying the stainless with a clean microfibre cloth or disposable towel. Air drying can work in some settings, but wiping dry gives a better finish and prevents water marks, particularly in hard-water areas. A dry bench is also easier to inspect before the next prep task.

Separate cleaning from sanitising

Cleaning removes visible soil, grease and food residue. Sanitising reduces microorganisms to a safer level after the surface has been cleaned. They are different jobs, and a sanitiser cannot do its job properly through a layer of fat, flour, sauce or raw protein.

This distinction matters most when changing between high-risk tasks. After trimming raw chicken, portioning seafood or preparing mince, clean and sanitise the bench and board before moving to ready-to-eat food, produce, pastry or garnish work. The exact process should match your food safety plan, products and local council requirements, but the order does not change: clean first, sanitise second.

For lower-risk work, such as setting up dry packaging or handling sealed stock, a thorough clean at the end of the shift may be sufficient. It depends on what the surface contacts and how your operation is set up. High-volume kitchens need more frequent reset points than a home BBQ station preparing one meal.

Deal with grease, water marks and stubborn residue

Fresh spills are easy. Dried grease, burnt-on sugar and water marks take more effort, so do not let them build up over several shifts.

For grease film, wash with warm water and neutral detergent, allowing the solution a short dwell time before wiping. Avoid aggressive scrubbing straight away. A clean, non-scratch nylon pad can help with stubborn residue, but test any pad on an inconspicuous area first and work with the grain.

For water marks or a cloudy finish, clean the bench first, rinse thoroughly and dry immediately. Mineral deposits are often the culprit, not a fault in the steel. If your water is particularly hard, use a stainless-safe cleaner approved for food-prep areas, then rinse and dry as directed. Keep acidic products controlled and never leave them sitting on the steel.

Sticky labels, tape residue and oil deposits need a suitable commercial degreaser or adhesive remover that is safe for the task. Do not improvise with solvents from the shed. What not to use on stainless steel

Stainless is tough, not indestructible. The wrong product or tool can scratch the finish, create corrosion points or leave the bench harder to keep clean.

Avoid steel wool, wire brushes and harsh scouring pads. Small particles from ordinary steel can embed in stainless and later rust, making it look as though the bench itself has failed. Avoid bleach or chlorine-based cleaners unless they are specifically approved for stainless, correctly diluted and rinsed promptly. Chlorides can cause pitting, especially when repeatedly left on the surface.

Do not use oven cleaner, strong caustic products or abrasive powder as a routine bench cleaner. They may remove a tough mark, but the trade-off can be surface damage, dull patches and a finish that holds grime more easily. Also avoid mixing chemicals. Detergent, sanitiser and degreaser all have a job. Mixing them creates uncertainty, not a better clean.

Clean the parts people forget

The bench top is only one part of a hygienic workstation. In a working kitchen, grime usually builds underneath, around and behind the obvious surface.

Check the board runners or support points, lower shelf, frame joins, feet, splash zones and any storage area under the bench. Wipe down containers before returning them to shelving. A clean top bench with dirty tubs underneath still creates a poor workflow and increases the chance of transferring grime back into service.

Pay close attention to seams and corners after seafood, raw meat or wet produce prep. These jobs create liquid that can travel further than expected. A fast visual check at close-down is useful, but run a clean cloth along edges and undersides as well. If it comes away dirty, the job is not finished.

Build a cleaning routine that survives service

The best cleaning system is one your team can maintain during a busy shift. Keep the required cloths, detergent, sanitiser and disposable towels within reach, clearly labelled and separated from floor-cleaning gear. If the cleaning station is on the other side of the kitchen, staff will delay the reset until the mess is harder to remove.

A practical routine has three levels. Wipe and reset between prep tasks, clean and sanitise after high-risk food handling, then complete a full wash-down at close. The close-down clean should include the removable board, top surface, frame, shelf and surrounding floor area. Let everything dry before stacking equipment back on the bench.

Cloths and sponges need managing too. A dirty cloth simply moves contamination from one surface to another. Change cloths regularly, wash reusable cloths properly and use a colour-coded system if your operation has one. This is basic discipline, but it makes a noticeable difference in fast-paced prep areas.
