That is where many kitchens lose time and hygiene at once. Staff wipe the top, spray a sanitiser, and move on. But sanitising does not work properly on a dirty surface. Food residue, fats and proteins reduce the effectiveness of the sanitiser, especially after meat, chicken or seafood prep.

The third is poor cloth control. Reusing the same wet cloth from raw protein prep to general wipe-down spreads contamination fast. Colour-coded cleaning tools help, but only if staff actually stick to the system.
The fourth is rushing contact time. This is the silent failure in many kitchens. Sanitiser needs time on the surface to do its job. Fast spray, fast wipe and back to prep is not a sanitation process.
Building a routine that works during service
