Good prep hygiene depends on repeatable steps. Wash first. Rinse if required by the product used. Sanitise at the correct strength. Allow contact time. Air dry or use clean disposable material where appropriate. Shortcuts save seconds and create hours of risk.

Hand contact is often the weakest link

Gloves get attention, but hands are the real issue. Gloves only help when they are changed at the right time. Too often, staff handle raw meat, touch a fridge handle, adjust containers, answer a question and return to prep wearing the same pair. That glove is now a transfer point.

Handwashing has to be built into movement, not treated as a separate compliance task. If the handwash station is blocked, too far away or poorly stocked, use drops. If the prep area is cluttered, staff touch more surfaces than they need to. Better station design reduces those touch points.
