What a restaurant workstation needs to do

A proper workstation is not just a flat surface. In a commercial kitchen, it has to support speed, hygiene, safety and consistency at the same time. If one of those falls away, the bench becomes dead space instead of productive space.

Start with the job itself. A workstation used for seafood prep has different demands from one used for pizza assembly, pastry finishing or bulk vegetable processing. Wet prep needs drainage awareness, corrosion resistance and easy wash-down. Meat prep needs board stability, impact tolerance and enough room to separate tools and product. If the workstation sits in the wrong spot, even a high-quality unit will underperform. A good prep area reduces steps and keeps repetitive tasks tight. Staff should be able to reach knives, containers, scales, wraps and sanitising gear without leaving the station every few minutes.

This is also where bench shape and orientation matter. Long benches suit linear production and team prep.
