On paper, both surfaces can hold ingredients, trays and gear. In practice, they behave very differently once the pace lifts. A wooden table can suit light tasks, dry prep or front-of-house styling, but in a working kitchen it often starts showing its limits quickly.

Hygiene is where the gap gets obvious
If your prep area deals with raw protein, moisture, marinades or constant wipe-downs, hygiene stops being a nice extra and becomes the starting point. Stainless steel has the clear advantage here because the surface is non-porous, easy to sanitise and less likely to hold odours, moisture or food residue.
Wood is more complicated. Some operators like timber because it feels substantial and traditional, and in certain low-risk uses it can be perfectly workable. But wood is porous. It can absorb liquids, stain over time and develop cuts and grooves that are harder to clean properly. Once that surface starts trapping moisture or food particles, sanitation becomes more labour-intensive.

For outdoor kitchens and BBQ areas, the gap widens even further. Timber exposed to sun, humidity and rain needs more maintenance and still tends to wear unevenly.
